Exclusive events onboard Silversea's Controtempo World Cruise 2025

HOI AN FOR FOODIES – Hoi An, Vietnam – February 1st, 2025

Disembarking Silver Dawn in Da Nang, Vietnam, Silversea’s guests travelling on the Controtempo World Cruise 2025 boarded a rustic boat to cruise down the Thu Bon River just after sunset, enjoying the famed lanterns of Hoi An during the celebration of the Tet Lunar New Year. In True Silversea style, guests enjoyed local delicacies, champagne, and other regionally inspired drinks. As their rustic boat cruise came to an end, guests were dropped off at one of three restaurants of their choosing: Tok, Dao Tien, and the Cargo Club Café. Each restaurant offered a distinct experience and flavour of local cuisine:  

TOK. (take over kitchen)   

Overlooking terraced rice paddies just beyond the bustle of Hoi An’s Old Town, this contemporary space is where modern design meets culinary artistry. With a Vietnamese fusion menu inspired by the restaurant’s on-site vegetable garden, tok. served dishes that surprised and delighted Silversea’s guests. Its bold decor and inventive dishes set the tone for a dining experience that was as visually stunning as it was delicious.  

Menu highlights: Chicharon (pork crackling with lemongrass and lime), bo tai chanh (wagyu carpaccio), and braised lamb shank.

DAO TIEN  

Tucked along the banks of the Thu Bon River, Dao Tien is an oasis of refinement, known for its peaceful ambience that perfectly complements the farm-to-table cuisine. Blending present-day local favourites with traditional dishes, the menu reflected Vietnam’s cultural heritage, reimagined with contemporary sophistication. Dining here enabled guests to celebrate Vietnam’s vibrant land and time-honoured culinary traditions.  

Menu highlights: Vietnamese-style pork taco, pumpkin soup with pan-seared tiger prawns, wok-fried beef tenderloin with phu quoc pepper & steamed rice.

THE CARGO CLUB CAFÉ  

Housed in a beautifully restored colonial building in Hoi An’s historic centre, The Cargo Club Café radiates warmth and charm with soft lantern lighting and a breezy terrace overlooking the river. Known for its beloved Vietnamese comfort food – Condé Nast Traveler calls out the pomelo salad – the generous portions and homestyle authenticity perfectly captured the soul of the city.  

Menu highlights (served family style): Black pepper beef with jasmine rice, sautéed coconut prawns, skillet cooked duck breast.  

Universally recognised for its timeless charm and visual beauty, Hoi An is fast becoming a hot spot for foodies: Lonely Planet calls it “a global food paradise;” Trip Advisor ranks it among the “Top 25 best culinary destinations in the world;” and the World Association of Chefs considers Hoi An to be Vietnam’s food capital. The city’s history as a trading port is evident in every bite, with influences of Chinese, Japanese and Western cuisines. Then there are dishes that are uniquely “Hoi An,” drawing upon the riches of the Quang Nam Province – namely the vegetables – and accentuated by a variety of noodles, fresh herbs, crunchy toppings, myriad dipping sauces and aromatic broths. From modern and inventive to traditional and comforting, each of the restaurants on offer to guests paid homage to Hoi An’s culinary heritage and current popularity.

A BIRD’S EYE VIEW – Singapore – February 7th, 2025  

One February 7th, Silversea’s guests enjoyed a bird’s eye view of Singapore, taking in an impressive 360-degree look at the dazzling skyline with privatised access to the SkyPark Observation Deck and Ce La Vie Restaurant of the Marina Bay Sands Hotel – right in the heart of this captivating city. Travelers on the Controtempo World Cruise 2025 were immersed in a sensorial experience as they wandered through the curated Hawker Market, celebrating the city's street market culture and paying homage to Singapore’s melting pot of culture. From this privileged vantage point 57 stories above the Lion City, guests sipped on Singapore Slings and Champagne as day turned to night, changing the mesmerising view. Guests enjoyed the rhythmic beat of the Malaysian Kompang Drummers and celebrated the Lunar New Year with a traditional Lion Dance. Beneath the evening sky, guests were dazzled by Chinese Silk Dancers, awe struck by the local Masked Face Changers, and were invited to the most scenic dance floor in the sky as an Indian Bhangra Dance closed out the night. A true festival atmosphere complemented by the culinary classics of Singapore's Hawker Culture - including prawn laksa, chicken rice, roti, and more, served from specially design Hawker stalls - created an authentic celebration, as guests revelled in the incomparable magic of Singapore.
